Provolone cheese is an Italian cheese make from cow's milk and has a semi-hard texture. Provolone cheese comes in two varieties: Provolone Dolce, which is aged for 2-3 months and has a pale yellow to white color and a sweet flavor. Provolone Piccante, on the other hand, has been matured for over four months and has a stronger flavor. Provolone cheese is closest to mozzarella and serves as a good substitute.
