Egg white powder is made from eggs that have been dehydrated, with a consistency similar to powdered milk. Egg whites act as a dough strengthener when used in baked goods. To give baked goods added texture, egg white powder is often used as a stabilizer. Egg white powder can be used in baking by adding it to a wet ingredient, such as a liquid dough or batter. It is best to add one teaspoon of powder for every three eggs called for in the recipe. If the recipe does not call for eggs, then one tablespoon of powder can be substituted for each large egg. The powder should always be sifted before adding it to the other ingredients.
