Frozen blueberries strain and keep juice
Fresh blue berries reduce in oven 325 degrees 15 minutes strain keep juice
Preheat oven 375
Ingredients:
Wet
1/2 cup room temp salted butter
1 1/2 cup white sugar
1/2 cup almond milk or your choice of milk
2 TB blueberry juice for color
Dry
1 cup flour AP or bread flour
1 cup of cake flour
2 tsp baking powder
Other
2 cup Blueberries
Instructions:
1. Mix the wet ingredients in a mixer on low speed for about 5 min.
2. Sift the Flour and then mix it with the baking powder in a bowl.
3. Fold the dry ingredients into the wet ingredients and add the blueberries into the mixture.
4. Put the batter into a bag and pipe it into a muffin pan. (makes 12 muffins)
5. Add chocolate chips of choice (Optional)
6. Bake for 18 min. Then Rotate and squirt blueberry juice over the muffins.
7. Bake for another 18 min.
8. Test with toothpick. Should be light brown.
