Sodium Benzoate is a mold inhibitor that helps to reduce the growth of mold and bacteria that are responsible for spoilage in many food products. Applications: Sodium benzoate - low dusting is recommended for use in food products whose pH levels are 4.5 or lower. Increased moisture, water activity, storage temperatures along with increased pH (above 4.5) necessitates higher usage levels of preservatives.
