The difference between Dutch process cocoa powder and natural cocoa powder is that Dutch process cocoa is less acidic since Dutch process cocoa powder is natural cocoa powder that uses an alkalizing agent to lessen its acidity. Dutch-process cocoa powder starts with cocoa beans that have been washed in alkaline solution of potassium carbonate. This wash neutralizes their acidity. So, Dutch-process cocoa powder is neutral. Because it is neutral, it does not react with baking soda. If one's recipe calls for baking soda, then using natural cocoa powder is preferable since Dutch process cocoa powder does not mix well with baking soda since Dutch process cocoa powder is less acidic than natural cocoa powder. However, if your recipe calls for baking powder, then Dutch process cocoa powder is preferable to natural cocoa powder.

 

Dutch process cocoa powder is darker and smoother tasting than natural cocoa powder and is for those who want to add cocoa powder, not as a leavening agent, but for a chocolate taste and color.
