Preparation Instructions: Keep frozen at 0 F (-18 C) or below until ready to use. Remove desired number of croissants from shipper. Reseal and return partial box to the freezer immediately. Place desired number of croissants on a parchment paper lined full sheet pan. Cover with plastic. Defrost completely at room temperature or in cooler overnight. Shape croissants by bending until tips touch in C shape. Brush with egg wash if desired. Proof until double in size at 90 F (32 C) and 70% humidity. Baking guidelines: Deck oven 350-375 F (175-190 C) for 15-20 minutes. Rack oven: 375-400 F (190-205 C) for 15-20 minutes. Convection oven: 300-325 F (150-160 C) for 15-20 minutes.
